Shellfishes have the peculiarity of having a shells or a carapace to protect the body. oyster are maybe the most popular since their shells sometimes hides a pearl. lobster are cooked in hot water still alive. Saint James shells take name from the Saint, whom they are symbol of. crayfish are appreciated for their pulp that is protect by a hard shield: the biggest species can be dangerous because they use nippers for defence.
